"Million Dollar Recipe"

Sweet Potato Casserole

Ingredients
Casserole Topping
  • 3 c. Boiled, mashed sweet potatoes
  • 1 c. Sugar
  • 1/2 tsp. Salt
  • 2 Eggs (slightly beaten)
  • 1/3 stick Margarine
  • 1/2 c. Milk
  • 1 tsp. Lemon extract
  • 1 tsp. Vanilla
  • 1 c. Brown sugar
  • 1/2 stick Margarine
  • 1/2 c. Coconut
  • 1/2 c. Chopped pecans

Directions for Casserole

Mix all together and place in a buttered casserole dish. Add topping and bake at 350 degrees about 45 minutes until topping is light brown.

Directions for Topping

Mix well and sprinkle on top of potato mixture.

Note* I make this recipe every year at Thanksgiving and Christmas. It is one of my family's favorite side dishes!

Hello. I am a lifetime resident of the beautiful Cumberland Plateau. It was in high school here that I met my husband, Jim. We married 26 years ago in 1982, and ten years later we had out beautiful daughter, Jennifer, who is now 16 and a junior at the same school where we met.

My family and I enjoy spending time together as much as we can, and we do a lot of camping in our fifth wheel. We have made so many new friends that like to camp, too, and we get together on many of our trips. I think this has brought our family closer together, and we hope to continue camping as a family for many years to come. Several of the clients I have sold homes to are also campers and this gives us a lot to talk about.
